An appetizer from my "to try" file.
List of Ingredients
2 tablespoons olive oil
2 teaspoons grated lemon zest
1 tablespoon freshly squeezed lemon juice
6 ounces soft goat cheese, at room temperature
1 to 2 cloves garlic, minced
12 slices prosciutto, halved crosswise
1/2 bunch arugula, trimmed
Freshly ground black pepper
Recipe
Whisk together olive oil, lemon zest and lemon juice in a small bowl; set aside.
In another bowl, combine goat cheese and garlic. mix.
Spread a thin layer of goat cheese mixture on each piece of prosciutto and top with 1 to 2 arugula leaves.
Drizzle each with some of the vinaigrette and season with pepper, as desired.
Roll up prosciutto with goat cheese and arugula inside and arrange on a serving platter, seam-side down.
Makes 24 rolls
This dish can easily be assembled in advance. Prosciutto is often sliced paper thin, but this is one time to ask that it be less thinly sliced.
