    Pumpkin Ice Cream Pie

    I haven't tried this but thought it sounded good.



    List of Ingredients





    8 oz cream cheese, room temperature
    1/3 c brown sugar
    1 tbsp pumpkin pie spice
    15 oz can pumpkin puree
    4 c vanilla ice cream
    2 graham cracker crusts



    Recipe




    Combine cream cheese, brown sugar, pumpkin pie spice. Mix well.
    Add pureed pumpkin and blend well.
    Add softened, but not melted, ice cream.
    Stir carefully.
    Spread in the two pie crusts.
    Cover with plasatic wrap and then heavy duty foil.
    Freeze.
    Thaw slightly before serving.

    If desired, garnish with whipped cream and cinnamon.
