REC: Rich Apple Pie with Oatmeal Cookie Crust (YUMMY!)
This is a wonderful and different apple pie! Now that the weather is cooler it's comforting to come home to this wonderful smell in the house.
Rich Apple Pie with Oatmeal Cookie Crust
Crust:
1 1/2 cups rolled oats
1/2 cup flour
1/4 teaspoon salt
3/4 teaspoon cinnamon
3 tablespoons brown sugar (packed)
1/2 cup unsalted butter, melted
1/2 teaspoon vanilla
Filling:
6 cups peeled, sliced apples (about 7 medium apples and I only use Granny Smiths)
3 tablespoons fresh lemon juice
1 teaspoon fresh lemon zest
1 1/2 teaspoon cinnamon
3 tablespoons flour
1/4 tsp. allspice
1/4 tsp. nutmeg (I use freshly ground)
6 tablespoons brown sugar (packed)
1/2 cup sour cream (I use low fat)
Recipe
Preheat oven to 375 degrees.
Combine all the crust ingredients in a large bowl and mix with a fork until thoroughly blended. Press firmly into the bottom and sides of a 9 or 10 inch pie pan (I always use a glass pan), reserving about 1/2 cup for the top of the pie. Place the sliced apples in the bowl and drizzle with lemon juice and toss to coat.
Place the 3 tablespoons of flour in a second, smaller bowl. Add the spices and lemon zest to the flour, and use your fingers to crumble in and distribute the brown sugar. Mix until well combined and sprinkle mixture over the apples. Add in the sour cream and mix well. Fill the unbaked crust, sprinkle with reserved crust mixture and pat into place.
Bake 45 - 50 minutes (or until apples are tender). If crust gets too dark during baking, cover loosely with foil. heavenly served warm with a rich vanilla or cinnamon ice cream.
