    Simple Mex Chicken and Beans

    1 pound cut-up boneless chicken breast for stir-fry
    1 envelope (1 1/4 ounces) taco seasoning mix
    1 can (15 to 16 ounces) black beans, rinsed and drained.
    1 can (15 oz) pinto beans, rinsed and drained
    1/4 c water

    Recipe



    Spray a large skillet with cooking spray.
    Place chicken strips in skileet and cook over medium-high heat until the centers are not pink.

    Add taco seasoning, both beans and water to skillet.
    Cook for 8 to 10 minutes in an uncovered skillet on medium-high heat. Stir often until sauce has slightly thickened.

    If desired, serve as wraps with flour tortillas. Offer sides of sour cream, salsa, green chilies and black olives.
