Strawberry Sunshine Cake

21 oz can of strawberry pie filling or topping
11 ox can madarin oranges, drained
18.25 oz pkg yellow cake mix
1/3 c oi8l
3 eggs
1 1/3 c plus 2 tbsp orange juice, divided
2 tsp grated orange zest, divided
4 oz cream cheese, softened
1 1/2 c powdered sugar
15 minut sprigs for garnish, opt.
Recipe
Preheat to 350. Brush bottom and sides of a 13x9 springform pan with melted butter.
Chill in freezer until ready to use.
Reserve 15 strawberries from pie filling, or use fresh strawberries and 15 mandarin oranges; set aside.
In large mixing bowl, blend cake mix, oil, eggsn and 1 1/3 c orange juice at low speed until moistened.
add 1 tsp orange rind.
Beat at medium sped for 2 minutes.
Pour better into chilled, prepared pan.
Sppon remaining pie filling over batter then place remaining mandarin oranges on top of filling.
Bake at 350 for 35 to 40 minutes or until golden brown; test with a toothpick.
Cool in pan for at least 1 hour.
Cream together cream cheese and butter.
alternately add powdered sugar and remaining 2 tbsp orange juice and 1 tsp orange rind.
Beat until creamy.
Spread over cooled cake.
Mark off 15 pieces and place a resevered strawberry and mandarin orange slice on each piece.
if desired, add a mint sprig to each piece.
