Stuffed Shell Casserole

1 package jumbo shell macaroni (12-oz.)
1/2 pound Italian sweet sausage
1 jar spaghetti sauce (32-oz.)
2 packages frozen leaf spinach (10-oz. ea) -- thawed
2 eggs
1 pound ricotta or cottage cheese
1/2 pound Mozzarella cheese -- shredded
1 teaspoon onion salt
1/4 teaspoon garlic powder
1/8 teaspoon ground nutmeg
2 tablespoons grated Parmesan cheese
Recipe
Cook shells until just tender (al dente); drain well. Remove sausage from
casings; brown sausage well and drain off fat. Add spaghetti sauce to
meat. Cover pan and simmer 15 minutes. Place thawed spinach in strainer
and press out excess moisture with hand.
Remove and chop coarsely.
In a large bowl, beat eggs slightly. Add chopped spinach, ricotta,
Mozzarella cheese, onion salt, garlic powder and nutmeg. Mix until well
blended. Preheat oven to 350 F. Pour 1/2 cup sauce in bottom of a 3-quart
casserole. Stuff each shell with 2 rounded teaspoons of filling and
arrange in single layer in casserole. Pour remaining sauce over shells.
Sprinkle with Parmesan cheese. Bake for 30 minutes.
