Sweet Onion Bake

7 1/2 c coarsely shopped Vidalia onions
4 tbsp butter
salt and pepper to taste
1/4 c regular rice
2/3 c half and half
3/4 c grated Swiss cheese
Recipe
Saute onions in large skillet with butter, salt and pepper until translucent; set aside.
Cook rice in boiling salted water for 5 or 6 minutes.
drain well.
Combine onions, rice and half and half.
Pour into 9x9 buttered baking dish.
Sprinkle with cheese.
Bake, covered, for 1 hour at 325.
