Sweet Potato Bars with Chocolate
Servings: 12 bars
Prep time: puree 1/12 hours-+20 minutes
Cook time: 40-50 minutes
Ingredients:
Graham Cracker Crust:
8 oz. Graham crackers finely ground
3 oz. finely ground almonds
1 teas. fresh ginger, finely grated
1 teas. ground cinnamon
1/2 c/ unsalted butter,melted

Chocolate Layer:
1/2 lb.Dark chocolate,cut in small pieces(or chips
1/2 c. milk

Sweet Potato layer:
2 c. sweet potato puree (or drain canned kind and place in blender to puree)
3 large eggs, slightly beaten
1 teas. sea salt
1 1/2 teas. cinnamon
1/4 teas. cloves
1 teas. fresh ginger,finely grated
1 c. granulated sugar
1 1/2 c. milk
1/2 c. heavy ream

Whipped cream:
1 c. heavy cream
1 teas. powdered sugar
1/2 teas. vanilla extract
Pecans,for garnish
Recipe
To make sweet potato puree, you can bake with skin on for 1 1/2 hours @ 375^,then peel and press through fine mesh sieve or ricer. Or boil for 20-30 minutes until soft then press through mesh sieve or ricer.Baking is more flavorful but boiling is quicker.
Crust:
Combine ingredients in a bowl and mix until well combined. Spread into an even layer in a 9-inch square baking pan.

Chocolate layer:
Gently melt chocolate in a bowl over steaming water. Add milk and mix over heat until completely combined. Pour over graham cracker crust(spread and shake to even out) and set aside to cool at least 15 minutes before layering in the sweet potato mixture.

Sweet potato Mixture:
Combine sweet potato ingredients in a bowl and mix until well combined. Gently pour over chocolate layer and put baking pan in the middle rack of the oven.
Bake for 40-50 minutes or until outer 1 inch appears set(inner will still have a little wiggle when gently shook). Set aside to cool, then put in the refrigerator until fully chilled.

Whipped cream:
Whip cream until soft peaks form, slowly add powdered sugar and vanilla beating until stiff peaks form.

Slice bars with a knife ,into even squares, wiping knife between each cut. Garnish with whipped cream and pecans.
