    1 lb. boneless pork
    1/4 c. cornstarch
    ¼ c flour
    ½ tsp salt
    1 1/4 c. chicken broth, divide
    cooking oil for deep fryer (heat to 365 degrees)d

    2 tbsp cooking oil
    1 large green pepper, diced
    ½ c chopped carrot
    1 clove garlic, minced
    1/2 c. sugar
    2 tsp. soy sauce
    1 beaten egg
    1/3 c. red wine vinegar
    ¼ c cold water
    2 Tbsp. cornstarch

    Recipe





    Trim fat from pork and cut into cubes.
    Combine egg, cornstarch, flour, salt and ¼ c chicken broth; beat until smooth
    Dip pork pieces in batter then fry in hot oil for 5 or 6 minutes or until pieces are golden; drain and keep warm.

    heat 2 tbsp oil in a skillet; cook green pepper, carrot and garlic until tender but not brown.
    Stir in remaining 1 cup chicken broth, sugar, vinegar and soy sauce.
    Bring to boiling then boil for 1 minute.
    Combine 1/4 cup cold water into the 2 tablespoons cornstarch; stir into boiled mixture.
    Cook and stir until thickened and bubbly.
    Add pork cubes and stir to mix
    . Serve with hot cooked rice, if desired.
    4 to 6 servings
