    List of Ingredients




    1/4 c extra-virgin olive oil
    1 onion, diced
    1 carrot, diced
    1 tbsp finely minced garlic
    salt and pepper, to taste
    3 1/3 c water
    finely grated zest and juice from 2 lemons
    1 1/2 c long grain rice
    4 scallions, sliced thinly on the diagonal
    1/4 c chopped fresh mint leaves

    Recipe



    Over low heat, place oil in a saucepan and heat.
    Add diced onion and carrot to heated oil and cook for about 10 minutes.
    Add minced garlic and cook 3 more minutes.
    Use salt and pepper to season as desired.
    *at this point, the directions do not say if you should use the same pan but since there is no mention of adding the onion, carrot and garlic, I assume you continue in the same pan.
    Bring the water, lemon zest and juice to boil.
    Add the rice, stir and reduce the heat to simmer.
    Cover and allow to simmer about 20 minutes or until the rice is tender and the liquid is absorbed.
    Place rice in a bowl and add scallions and mint.
    Fluff with fork and serve.
    6 servings.
