Vegetable soup 2

List of Ingredients
1 large container vegetable stock
1 can diced tomatoes (including liquid)
1 can white beans, drained and rinsed
2 or 3 ribs celery, sliced
3 or 4 carrots, sliced (I don’t peel the carrots)
1.5 cups sliced mushrooms
1/2 to 3/4 cup sliced onion
1 ear of corn, removed from cob
1 cup cabbage, chopped
1 medium potato, peeled and diced
1/4 cup lentils
1/4 cup quick barley
salt, pepper and garlic powder, to taste
1 or 2 leaves fresh basil, rolled and snipped into narrow strips.
A garnier of basil leaves and garlic can be tied in cheesecloth and placed in the pot, rather than using garlic powder and clipped basil leaves.
Recipe
Add ingredients to soup pot. I use a 3.5 quart pot. This makes the perfect amount for the two of us, through 2 or three meals. Makes about 6 servings.
Bring to simmer and simmer about 40 minutes to an hour. Serve with flaky biscuits.
