    Whipped Angel Food Pie

    Servings: 1 pie

    1-3 oz. pkg. lemon gelatin
    1/2 C. sugar
    2/3 C. hot water
    1/3 C. hot lemon juice
    1 tsp. lemon zest
    1 C. undiluted evaporated milk
    2 Tbs. lemon juice

    Recipe




    Dissolve the gelatin & sugar in hot water & 1/3 C. hot lemon juice.
    Chill to consistency of unbeaten egg white.
    Add lemon zest.
    Chill milk in refrigerator tray until soft crystals form around edges of tray (15-20 min.)
    Add 2 Tbs. lemon juice & whip very stiff (2 min.)
    Fold whipped milk into gelatin mixture.
    Spoon into baked pie crust or graham cracker crust.
    Chill
