    1/2 c hot water
    4 oz melted white chocolate
    2 c sugar
    4 egg
    1 tsp. vanilla
    1 c buttermilk
    1 c margarine
    2 1/2 c cake flour, sifted
    1 tsp soda
    1/2 tsp salt
    3 1/2 oz coconut
    1 c chopped pecans



    Icing - use your own choice

    White Icing:
    2 c sugar
    1 tsp vanilla
    1 c butter, melted
    1 snall (5.33 oz) can evaporated milk



    Cream Cheese Icing

    8 oz cream cheese
    1/2 c margarine
    1 box powdered sugar
    1 c chopped nuts
    1 tsp vanilla



    White Chocolate Icing

    1/2 c plus 2 Tbsp sugar
    6 Tbsp evaporated milk
    1/2 c butter or margarine
    2 c white chocolate, broken into small pieces
    1 1/2 tsp vanilla
    slivered almonds, toasted or toasted pecans

    Recipe





    Preheat to 350.
    Separate eggs; beat whites till stiff.
    Cream butter and sugar.
    Beat in egg yolks.
    Combine melted chocolate with hot water; add to mixture.
    Add vanilla.
    Add flour, soda and salt alternately with buttermilk. Fold in beaten egg whites; add coconut and nuts.
    Pour into three 9-inch pans and bake about 45 minutes or until cake tests done.


    White Icing:

    Mix ingredients and let stand 1 hour; Stir occasionally.
    Cook to soft ball stage at 238 degrees.
    Beat until batter is of spreading consistency.
    Add nuts, if desired.

    Cream Cheese Icing

    Blend all ingredients together until smooth and ice
    cake.

    White Chocolate Icing

    Combine ingredients, except nuts, in top of double
    boiler.
    Stir over hot water until melted.
    Blend until smooth.
    Ice cake immediately.
    Garnish with nuts.
