Roasted Potatoes

List of Ingredients
3-4 medium potatoes, cut into chunks but not peeled
2 Tbsp. olive oil
3 Tbsp. preferred spice(s) or herb(s)
pepper to taste
salt to taste
Recipe
Cut potatoes.
Place in ice water for 30 minutes.
Drain and dry on paper towels.
Preheat to 375.
Toss potatoes with olive oil.
Spread on lightly sprayed cookie sheets.
Sprinkle on half of the herbs, salt and pepper.
Bake for 15 minutes.
Turn, sprinkle on remaining herbs and bake an additional 15 to 20 minutes, or until lightly golden.
