    Sweet and Sour Carrots

    1 lb. carrots, cleaned and cut into thirds
    1 tbsp. margarine
    1/4 cup brown sugar
    1/4 cup red wine or cider vinegar
    1 tbs.p fresh parsley, chopped, optional

    Recipe






    Put carrots in a large saucepan and cover with water. Bring to a boil, reduce to
    simmer and cook for 10 to 15 minutes.

    Melt the margarine in a small saucepan over low heat. Add brown sugar and
    wine (or vinegar). Stir until well combined. Remove
    from heat.

    Drain carrots. Toss with sauce. Garnish with parsley if desired.

    6 servings.
