    List of Ingredients


    • 1 pound sliced bacon
    • 6 cups frozen shredded hash brown potatoes
    • 1 small chopped onion
    • 1 medium green pepper chopped
    • 6 eggs
    • 1/4 cup milk
    • 3/4 teaspoon salt
    • 2 cups shredded cheddar cheese
    • 3 tablespoon butter


    Instructions


    1. Fry up bacon, crumble and set aside
    2. In a 2 1/2 quart micowave safe dish combine potatoes, onion, green pepper and butter.
    3. Cover and microwave on high for 7-8 minutes or until vegetables are tender. Stirring once.
    4. Beat eggs, milk,salt and pepper, add to vegetables.
    5. Cover and cook at 70% power for 6-8 minutes or until eggs are almost set. Stirring every 2 minutes.
    6. Srpinkle with cheese and bacon.
    7. Cook uncovered on high 1-2 minutes or until cheese is melted.
    8. LET STAND 5 MINUTES BEFORE SERVING
