HASH BROWN EGG DISH

List of Ingredients
- 1 pound sliced bacon
- 6 cups frozen shredded hash brown potatoes
- 1 small chopped onion
- 1 medium green pepper chopped
- 6 eggs
- 1/4 cup milk
- 3/4 teaspoon salt
- 2 cups shredded cheddar cheese
- 3 tablespoon butter
Instructions
- Fry up bacon, crumble and set aside
- In a 2 1/2 quart micowave safe dish combine potatoes, onion, green pepper and butter.
- Cover and microwave on high for 7-8 minutes or until vegetables are tender. Stirring once.
- Beat eggs, milk,salt and pepper, add to vegetables.
- Cover and cook at 70% power for 6-8 minutes or until eggs are almost set. Stirring every 2 minutes.
- Srpinkle with cheese and bacon.
- Cook uncovered on high 1-2 minutes or until cheese is melted.
- LET STAND 5 MINUTES BEFORE SERVING
