THIS CAKE TAKES TIME TO DO BUT IT IS WORTH THE WAIT........
List of Ingredients
- 1 1/3 cup sugar
- 1 1/3 cup water
- 1 cup raisins
- 1 tablespoon butter
- 2 large carrots grated
- teaspoon cinnamon
- teaspoon cloves
- 1 teaspoon nutmeg
- SIMMER THIS TOGETHER FOR 5 MINUTES.
- COVER AND REST IT FOR 12 HOURS. THEN ADD:
- 1 cup pecans
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- Bake in 2 - 8 inch pans at 300
- CREAMY CARAMEL FROSTING
- mix in saucepan: 1/2 cup brown sugar
- 1/2 cup evaporated milk
- 1/8 teaspoon salt
- 1/4 cup butter or margarine
Instructions
- Frosting: Cook and stir over meduim heat until it reaches a full all over boil.
- take off the heat and let cool to lukewarm. Add 1 teaspoon vanilla. Then add 3 cups powdered sugar and 1/2 cup sugar at a time.
- If frosting becomes to thick to spread easily add a few more drops of milk....
