    List of Ingredients


    • 7 meduim sized peaches (2 1/2 pounds)
    • 3/4 cup orange juice
    • 3/4 cup sugar
    • 3 tablespoons corn starch
    • 2 tablespoons lemon juice
    • 10 inch prepared crust


    Instructions


    1. Peel, pit and slice one cup peaches and puree in the blender or food processor.
    2. Put puree in pan and stir in orange juice.
    3. Combine the sugar and corn starch together then add to the peach puree.
    4. Stirring constantly, bring to a rolling boil on meduim-high heat.
    5. Set pan in ice water and stir frequently to cool.
    6. While puree is cooling, peel and slice remaining peaches
    7. Mix peach slices with the lemon juice
    8. Gently stir slices into puree
    9. Pour into pie shell and chill at least 45 minutes
    10. GRAHAM CRACKER CRUST
    11. 2 cups graham cracker crumbs
    12. 1/2 cup butter or margarine (melted)
    13. 1/4 cup sugar
    14. Mix graham cracker crumbs and sugar add melted butter and mix well
    15. press mixture against bottom and sides of the pie plate
    16. Microwave on high for 2 1/2 to 3 minutes
    17. use the back of large spoon to press crumbs against plate again.
    18. let cool before filling.


    Final Comments


    Serve plain, or with whipped cream or vanilla ice cream.
    May be garnished with orange zest curls and or mint leaves Makes 8 servings
