- 1 rolled pork loin roast, 4 to 5 lbs.
- 1 teaspoon salt
- 1 8oz. can whole cranberries
- 1 can jellied cranberry
- 3/4 cup apple juice
- 1 tablespoon corn starch
- 2 tablespoon cold water
Instructions
- Rub roast with salt.
- Place on rack in shallow pan
- Poast at 325 for 2 1/2 to 3 hours, spoon on cranberry glaze during the last 45 minutes.
- CRANBERRY GLAZE: in small saucepan combine cranberry sauce apple juice and jellied cranberry, bring to a boil,
- reduce heat and simmer for 10 minutes.
- Combine corn starch and water, stir into cranberry sauce mixture, cook and stir until thickens and bubbles.
