List of Ingredients
- 3 pounds of fryer parts (cut small)
- 2 packages of Italian sald dressing mix (Good Seasons)
- 3 tablespoons of flour
- 1/4 cup lemon juice
- 2 tablespoons salt
- 2 tablespoons butter (soft)
- 1 cup milk
- 1 1/2 cups pancake mix combined with
- 1 teaspoon paprika
- 1/2 teaspoon sage
- 1/4 teaspoon pepper
Instructions
- Wipe chicken dry.
- Make paste with first 5 ingredients
- brush to coat chicken evenly.
- Stack pieces in bowl.
- cover & refrigerate several hours.
- 1 1/2 hours before serving heat 1/2 inch oil in 2 large skillets so chicken won't be crowed.
- Dip pieces in milk, then in pankcake mix and coat well.
- Dust off excess mix
- Lightly brown about 4 minutes on each side
- Place in single layer in shallow pans
- Spoon in remaining milk over pieces.
- Seal with foil.
- Bake for 1 hour at 350
- Uncover bake 10 minutes at 400 to crips chicken baste with milk again.
- Serves 8
