THE RECIPES IN THIS CATEGORY WERE MY MOTHER-IN-LAWS AND WHEN SHE PASSED AWAY HER LITTLE TIN BOX THAT HELD HER RECIPES WAS GIVEN TO ME SO THIS IS MY WAY TO HONOR HER.......
List of Ingredients
- 3/4 cup fine bread crumbs
- 1/2 cup milk
- 1 pound ground beef
- 1 egg beaten slightly
- 3/4 cup finely chopped onion
- 2 1/2 teaspoon salt
- 2 tablespoon butter
- 1 1/3 cups minute rice
- 1 can 8.5 oz. sliced pineapple
- 1 green pepper diced
- 1/4 cup catsup
Instructions
- Combine bread crumbs, milk beef, 1/4 cup onion, and 1 1/2 teaspoon salt.
- Gently form 20 meatballs
- brown the meatballs in butter in large skillet.
- Add rice and remaining onions stir gently until rice is slightly browned.
- Drain pinaplle, measuring syrup.
- Add water to syrup to make 1 3/4 cup of liquid.
- Cut each pinapple sile inot 6 wedges
- Gradully add with the liquid and 1 teaspoon of salt and remaining ingredients to rice.
- Stir throughly, bring to a boil, reduce heat and cover and simmer for 5 minutes............
- makes 4 servings
