Blueberry Cake

Recipe Introduction
I use this recipe to make blueberry or any berry muffins. It makes about 1-1/2 dozen.
List of Ingredients
1 cup sugar (scant)
2 cups flour
4 tespoons baking powder
1/4 teaspoon salt
1 egg, well beaten
1 cup milk
4 tablespoons melted shortening (I use cooking oil)
1 cup berriesRecipe
Sift dry ingredients throughly. Add blueberries and make sure they are covered with dry ingredients.
Combine egg, milk and melted shortening (slightly cooled) OR oil.
Turn into dry ingredients, stir until just combined. Mixture will have a rough appearance.
Grease a 8-inch square cake pan, fill two-thirds full with batter. Handle batter as little as possible.
Bake in a HOT oven.
I suggest 375ºF to 400ºF for about 30 minutes or until golden brown. I use the same temperature for the muffins.
