    2 eggs
    1 cup sugar
    1 cup molasses
    1 teaspoon ginger
    2 teaspoons soda
    1 cup shortening
    1 cup hot coffee
    4-1/2 cup sifted flour
    1 tablespoon vinegar
    1 teaspoon salt

    Recipe



    Preheat oven to 375ºF.

    Place eggs, shortening, sugar, molasses, vinegar and coffee in blender container and blend until thoroughly mixed.

    Sift together into a mixing bowl:- flour, ginger, soda and salt. Add liquid ingredients, stirring well until well blended and smooth.

    Drop by teaspoon onto a lightly greased cookie sheet and bake 10 to 12 minutes in preheated oven.

    Frost with a daub of icing sugar.

    Makes about 6 dozen.
