Old Fashioned Tapioca Pudding

1/4 cup pearl tapioca (not instant)
2-1/4 cups milk
2 eggs, slightly beaten
1/3 cup white sugar
Dash of salt
1/2 teaspoon vanilla
Recipe
Method:-
Soak tapioca in cold water, to cover, for at least one hour.
Preheat oven to 350ºF.
Add milk to tapioca; cook in double boiler until clear (about 30 minutes).
Beat eggs slightly; add sugar, salt, vanilla and cooked tapioca.
Pour into greased 1-1/2 quart casserole; place in a pan of hot water; bake in preheated oven until golden brown on top - about 30 minutes.
Serve either hot or cold.
Makes approx. 6 servings.
