    I experimented with different combinations until I came up with a product all the family would eat (except me, my favourite is the Mild, which I have also posted.

    List of Ingredients




    12 lbs. ground pork
    (with at least 15% fat)
    4 cups water
    6 teaspoons salt
    12 to 16 bay leaves, crushed
    10 to 15 cloves garlic, minced
    4 tablespoons paprika
    2 heaping tablespoons chili peppers, crushed
    2 teaspoons peppercorns, crushed or freshly ground
    2 teaspoons cayenne


    Recipe



    Whirl bay leaves, garlic, paprika, chili peppers, peppercorns and cayenne in blender or processor with the water.
    Mix all together, put in casings or form into patties.
    Freeze in quantities suitable for a meal.

    Note: Cut down on hot ingredients until you taste a little, which you fry up. Then adjust to taste.
