    Chicken with Sugar Shack Dumplings

    I originally found this recipe about 30 years ago, in a cookbook a friend had for wild meat, it called for partridges. Since I have no one who hunts, therefore never get any partridges I changed it to a chicken dish.
    My kids and all my friends always ask for seconds of this dish, so I have to double everything when making it for company.

    List of Ingredients




    3 chicken legs, cut each into drumsticks and thighs.
    1/3 cup flour
    2 teaspoons paprika
    1/3 cup butter or margarine
    1 teaspoon salt
    1/2 teaspoon pepper
    1 cup water
    ----------------------------------------
    1 can cream of chicken soup (you may use cream of mushroom instead).
    enough milk to fill soup can 1-1/2 times.
    2 medium cooking onions, cut up.

    Dumpling Ingredients:-
    2 cups flour
    4 teaspoons baking powder
    1/2 teaspoon salt
    1 teaspoon poultry seasoning
    1 teaspoon celery seed
    1 teaspoon onion flakes (or a tablespoon onion chopped very fine)
    1 tablespoon poppy seeds (optional)
    1/4 cup oil
    1 cup milk
    -------------------------------------------
    Topping Ingredients:- 1/4 cup butter or margarine, melted.
    2/3 cup crushed cracker crumbs

    Directions:-
    Preheat oven to 425F.

    Coat pieces of meat with the flour paprika mixture. Brown slowly on all sides, in the 1/3 cup butter; season with salt and pepper. Add water, cover and cook until eat in tender. Transfer meat to a casserole, place cut up onion in amoongst the pieces of meat.
    Add then can of soup and the 1-1/2 soup cans of milk to the pan the meat was browned in, stir well and bring just to the boil. Pour over chicken and onions.
    Mix "Dumplings" and place on top of casserole, top this with buttered cracker crumbs.
    Bake, uncovered, in preheated 425F oven for 30 to 35 minutes.

    "Dumplings":-
    Combine flour, baking powder, seasonings and onions. Stir in oil and milk. Drop by tablespoonfuls over meat mixture in casserole. Bake as described above.
