    Betty's Super Meatloaf With Tomato Sauce

    List of Ingredients


    • 1 tablespoon olive oil
    • 3/4 cup finely chopped onion
    • 1/2 cup finely chopped celery
    • 3/4 cup chopped green onion
    • 1/2 cup finely chopped green pepper
    • 1/4 cup finely chopped sweet red pepper
    • 1/4 cup finely chopped banana pepper
    • 1 14.5 oz can of chopped tomatoes
    • 2 generous teaspoons chrushed garlic
    • 1/2 cup ketchup
    • 1/4 cup cream
    • 3 eggs
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1/2 teaspoon ground thyme
    • 1/2 teaspoon tobasco sauce
    • 1/2 pound ground veal
    • 3/4 pound ground pork
    • 1 1/2 pounds ground chuck
    • 1/4 pound sleeve of saltines crushed. May sustitute with bread crumbs or pieces of torn bread for some of the crackers.
    • Tomato Sauce For Meatloaf
    • 1 can tomato soup and 1 can water
    • 1 tablespoon of worcestershire sauce
    • 2 teaspoons sugar
    • 1/2 cup ketchup


    Instructions


    1. Saute first 7 ingredients together till just starting to soften. Let cool.

    2. Mix all ingredients for meatloaf together, being sure not to mix sauce ingredients into meatloaf. Mix with your hands, it's the best and easiest way, and bake in a 9x 13 pan or a couple loaf pans, leaving room to add tomato sauce. Dip hands in cold water and pat over the meatloaf. Bake at 350 approximately 1 hour and pour off any grease. Mix together ingredients for tomato sauce until sugar is dissolved and pour over meatloaf. Cover with the tomato sauce and bake another 25 minutes. Let cool for 10 minutes before slicing.



    Final Comments


    I like to tear up about a 1/3 to 1/2 cup of bread into small pieces for my meatloaf to use along with the crushed saltines. Place saltines in baggie and squeeze out the air, then roll with a rolling pin for an easy way to crush and not have to clean the blender. You can bake in any pan you desire, just adjust time.
