    Big Al's Crawfish Etouffe'

    1 lb crawfish tails
    1 1/2 large yellow onion
    1/2 cup diced celery
    1/2 stick butter
    1/2 cups shallots (green onions)
    Parsley*
    1 T cornstarch
    1/2 cup cold water
    1/2 cup diced bell pepper
    2 T minced garlic (optional)
    hot sauce*
    salt*, pepper*, cayenne*
    1/2 cup white wine (optional)
    *=add "to taste"

    Melt butter (or Marg) in heavy pot. Add onions, celery, parsley,
    shallots, bell pepper, and garlic. Simmer covered for at least 25
    minutes. If you have crawfish fat, add and simmer about 10 more
    minutes. Add tails & all other stuff (except water, corn starch).
    Cook covered over med. heat for 20 minutes.Taste & adjust for
    seasoning.
    Dissolve cornstarch well in water, then add. This thickens it. Stir
    well, let set covered for about 5 minutes.
    Serve over rice.
