List of Ingredients
6 :5 to 7 ounce catfish filets
3 cups roasted pecans
1 cup bread crumbs
3 eggs
1/2 cup milk
1 cup flour
seafood seasoning (I use Tony C's)
olive oil
Meuniere sauce:
4 or 5 T butter
1 T lemon juice
2 T Worcestershire sauce
1/2 cup whipping cream
1/4 t salt
1/4 t white pepper
note: I am not SURE about the amounts posted for the sauce. I play around with it and so should you.
Recipe
Catfish: Lightly season filets & refrig. Puree all but 1/2 cup pecans
with the bread crumbs. Set mixture aside. Make egg & milk wash. Season
flour. Coat filets with 1)flour 2)egg wash 3) press into pecan/crumbs.
Saute fish lightly in oil.
Make sauce : 1st melt butter over medium heat & add lemon juice. Then add the rest. Heat until reduced to the thickness you like. Pour on prepared
fish!
