Crawfish Pie (or Egg Rolls)
Note: This recipe is for one crawfish pie. The filling is also great in Egg Rolls. The quantities listed here will make about 30 egg rolls. I buy the pre-made egg roll wrappers from an Oriental Grocery.
1stick of butter
2 T Olive oil
1/2 container of pre-chopped seasoning
(onion, celery, parsley, garlic) about 12 oz.
1 lb. crawfish tails
Tony C’s or Emeril’s essence (to taste)
Salt & pepper (to taste)
3 or 4 dashes Worcestershire
3 dashes hot sauce
A dash or 2 of cayenne
2 T tomato paste
1 can of cream of celery soup
Some bread crumbs (see note later)
Parmesan cheese for top (optional)

Recipe
Saute seasoning in oil & butter until soft. Add the rest of the ingredients from the list (up to and including Tomato Paste). Cook at low/medium heat for about 7 minutes. Remove from heat. Add soup. Add in bread crumbs slowly until the mixture is pretty firm. If you don't add enough, like me, your pie will not stay together.
Bake pie crust at 350 degrees for about 10 minutes. Then fill will the filling.
Bake for 20 - 30 min. at 350. Sprinkle the top with parmesan cheese if you want.
