    White sauce (topping for sautéed fish)

    List of Ingredients

    ¼ cup green onion
    ¾ cup dry white wine
    ½ cup whipping cream
    8T butter
    2T parsley
    2T taragon
    2T chives
    To taste: salt & pepper
    Cajun seasoning
    Hot sauce
    Cayenne
    Worchestshire sauce

    And you may add some shrimp or crawfish to the sauce

    Recipe

    Over medium heat, cook the green onions in the wine until it almost gone. Add cream and heat until reduced by ½.
    Add butter one T at a time. Remove from heat and add the rest.
    Place on top of already prepared fish.
