When ever I have spare time (twice a year) I make a batch of BAKED ROUX. It is easy. It is basically baked flour. It is wonderful to have on hand in the fridge. It makes gravy making a snap.
Here's what I do:
I put a few cups of flour into a pyrex dish (maybe 8 inches by 12 inches). Place in a preheated 350 degree oven for about 10 minutes. Take out and mix around. Put back in for about 8 minutes. Take out & stir. Put back in for about 6 minutes. etc. etc. etc. Keep going until it is the color you want (I go for peanut butter color).
Store in your fridge.
Note: There is no fat involved. So if you want to, you can mix a little fat (oil or butter) and your pre-made roux.Heat it until it is the right consistency. It won't take long because the flour is already done.
Use the flour for gravy, its already cooked!!!!!!!!!
