Big Al's Roasted Corn Grits

List of Ingredients
1 cup Quaker GOLDEN quick grits
(use regular Quick Grits if you can't get golden)
4 ears of corn
1 small yellow onion
2 T minced garlic
½ stick of butter
1 pint of heavy whipping cream
salt
cajun seasoning
1 and 1/2 cups of water (or chicken stock)
Recipe
Directions:
*Remove husk from corn and roast on grill**. Remove the corn from the cob. Lightly chop the corn.
*Sauté the onions and garlic in butter until soft (note: you can usually add the garlic a few minutes after you start the onions)
*Add water, cream and one quarter teaspoon of salt. Bring to a boil. Add grits and corn. Return to boil. Reduce to simmer and cover for 7 to 10 minutes. Add cajun seasoning and/or salt to taste.
Serves 4 or 5 as a side dish (unless your friends are real pigs)
** Or you can roast the corn in the husk (on a grill or in the oven). Either way, you should soak in water for a little while so that the husks don’t catch on fire. I like to do mine on the grill. Once the corn is done, the silk is VERY easy to remove
