Carrot Cake.......This is my favorite and very
;moist..
Carrot Cake
2 cups sugar
1-1/2 cups salad oil
4 eggs
1 cup chopped walnuts
1 can crushed pineapple (20 ounce size)- Undrained
2 cups carrots, finely grated (about 3 large ones)
2-1/2 cups flour
2 tsp cinnamon
1-1/2 tsp salt
1 tsp soda
Mix all together and put in prepared 9 x 13 pan
Bake at 375 degree oven for 1 hour
Frosting:
8 ounce cream cheese (softened)
1 stick butter (softened)
1 box powdered sugar
1 tsp vanilla
Beat together and frost cooled cake
