    MEXICAN FRUIT CAKE

    List of Ingredients




    1 – 20 oz. can crushed pineapple (juice included)
    2 cups flour
    2 cups sugar
    2 eggs
    2 tsp. baking powder
    ½ tsp. salt
    1 cup chopped nuts

    Recipe



    Heat oven to 350 degrees.
    Grease 13” X 9” pan lightly with spray oil.
    Mix all ingredients together in order given.
    Pour into prepared pan and bake for 45 minutes


    FROSTING

    4 oz. cream cheese, softened
    1/8 lb. butter, softened
    1 cup icing sugar
    1 tsp. vanilla
    Beat cream cheese and butter until creamy. Beat in icing sugar and vanilla until incorporated and smooth. Frost cake in pan, while still warm.
