PICKLED KNACKWURST

1½ pounds knackwurst, fully cooked
(or Polish Sausage, Bologna, etc.)
1 medium onion, sliced thin
2½ cups water
2 tablespoons sugar
1¾ cups vinegar
1½ teaspoons salt
1 tablespoon pickling spice
1 teaspoon crushed red pepper
1 teaspoon whole allspice
¾ teaspoon pepper corns Recipe
Pack knackwurst (which has been cut into
bite size pieces) and sliced onion in a large
quart jar. Bring remaining ingredients to a
boil and cover knackwurst and onion with
boiling liquid and seal. Can be served in
seven days.
