    Recipe Introduction


    Instead of using a casserole dish, I usually make it all right in a big cast iron frying pan. I also sub more burger instead of the sausage. Works for me! Fix a salad or a fruit platter and dinner is served.


    List of Ingredients


    • 1 lb hamburger
    • 1/4 ground sausage
    • 1 sm. chopped onion
    • 1 clove garlic-chopped
    • 1-16oz can tomatoes-chopped
    • 1-16oz can corn-drained
    • 20-24 black olives
    • 2 to 3 tsp. chili powder
    • 1 1/2 tsp. salt
    • 1 c. cornmeal
    • 1 c. milk
    • 2 eggs- well beaten
    • 1 c. shredded cheddar cheese


    Instructions


    1. Cook and stir meat, onion and garlic until meat is browned. Drain
    2. Stir in tomatoes, corn, olives, chili powder and salt
    3. Heat to boiling and pour into a 2 qt. casserole dish
    4. Mix cornmeal, milk and eggs and pour over mixture.
    5. Sprinkle with cheese and bake at 350 until golden brown. 40 to 50 minutes


    Final Comments


    This is good with sour cream on the side.
