Hamburger Corn Pie

Recipe Introduction
Instead of using a casserole dish, I usually make it all right in a big cast iron frying pan. I also sub more burger instead of the sausage. Works for me! Fix a salad or a fruit platter and dinner is served.
List of Ingredients
- 1 lb hamburger
- 1/4 ground sausage
- 1 sm. chopped onion
- 1 clove garlic-chopped
- 1-16oz can tomatoes-chopped
- 1-16oz can corn-drained
- 20-24 black olives
- 2 to 3 tsp. chili powder
- 1 1/2 tsp. salt
- 1 c. cornmeal
- 1 c. milk
- 2 eggs- well beaten
- 1 c. shredded cheddar cheese
Instructions
- Cook and stir meat, onion and garlic until meat is browned. Drain
- Stir in tomatoes, corn, olives, chili powder and salt
- Heat to boiling and pour into a 2 qt. casserole dish
- Mix cornmeal, milk and eggs and pour over mixture.
- Sprinkle with cheese and bake at 350 until golden brown. 40 to 50 minutes
Final Comments
This is good with sour cream on the side.
