- 2 lb. ground beef
- 1/2 cup chopped onion
- 3/4 cup salsa
- 1 pkg. taco seasoning
- 1/4 cup water
- 1 cup whole kernel corn
- 1 can sliced olives, drained ( 2 1/4 oz.)
- 1 pkg ( 8 oz.) corn muffin mix
- 1 large egg
- 1/3 cup milk
- 1 cup shredded cheddar cheese
- 1 can ( 4 oz.) diced green chilies
Instructions
- Cook beef and onion in skillet until browned, drain. Stir in salsa, taco seasoning and water. Cook over low heat 5-6 minutes or until mixture thickens, stir in corn and olives. Spoon into 8" square baking dish. Combine muffin mix, egg, and milk until smooth. Stir in chilies and cheese. Spread over meat mixture. Bake 30-35 minutes or until golden brown.
