- 1 2 to 3 lb. chuck roast
- 1 small bag dried pinto beans, soaked overnight
- 2 tblsp. chili powder
- 1 tblsp. ground cumin
- 1 tblsp. salt
- 1 tblsp. dried oregano
- 1 tblsp. minced garlic
- 1 can chopped green chilies
Instructions
- Put everything in crockpot and cover with water. Cook in large crockpot for 6-8 hours. When finished, shredd the beef. It will be very tender and usually break apart with just a wooden spoon. Stir and within 15 minutes it will thicken and be ready to serve. Serve over a bed of fritos and top with chopped tomatoes, green onions, lettuce, sour cream, etc. Or can be served with tortillas.
