Asian Chicken & Broccoli Stir Fry

- SAUCE
- 6 tblsp. hoisin sauce
- 3 tblsp. soy sauce
- 2 tblsp. equal sweetner
- 2 tsp. lime juice
- 2 tsp. dark sesame oil
- 1/4 tsp. crushed red pepper flakes
- STIR-FRY
- 1 ( 3 oz.) pkg. any flavor ramen noodles soup mix
- 1 cup warm water
- 2 tblsp. vegetable oil, divided
- 1 lb. boneless, skinless chicken breasts, cut into 1" pieces
- 3 cups broccoli florets
- 1/2 cup chopped red bell pepper
- 1/3 cup sliced green onion
- 1 (8 oz.) can sliced water chestnuts, drained
- 1/2 cup baby corn, optional.
Instructions
- For Sauce: Combine all ingredients, set aside. Remove seasoning packet from ramen noodles and save for another use. Break noodles into pieces. Place in 1 qt microwave dish- pour warm water over noodles. Microwave on high uncovered 2-3 minutes, stirring twice until noodles are tender. Set aside. Meanwhile heat 1 tblsp oil in large skillet or wok. Cook and stir chicken 8-10 minutes or until no longer pink. Remove chicken, keep warm. Add remaining 1 tblsp. oil. Cook and stir broccoli 4 minutes. Add red pepper and onion, cook and stir 2-3 minutes. Add cooked chicken, water chestnuts and baby corn. Cook and stir 1 min. Stir in cooked noodles and sauce. Heat through
