Banana Pudding
List of Ingredients
5 eggs, separated
1 cup sugar
1/2 cup flour
4 cups milk
1 tblsp vanilla extract
Vanilla wafers
6 bananas
Meringue
3 egg whites
1 cups confectioners' sugar
1 tsp vanilla extract
Recipe
Mix flour, sugar, egg yolks and milk in a double boiler and stirring constantly, cook until thickened. (Whisk in a little more milk if too thick). Put bananas on the bottom and sides of a 13x9 inch pan. Slice 3 bananas over the wafers and pour about half of the pudding over the bananas. Make another layer of wafers, 3 bananas and pour the remaining pudding over the top.
Meringue
Beat egg whites until soft peaks form. Gradually beat in the sugar until stiff peaks form. Beat in vanilla and spread over the pudding. Place in a preheated 350 degree oven until meringue is browned to your liking.
