Streuselkuchen (Crumb Cake)
List of Ingredients
1/2 c. milk
2 tbsp. sugar
3/4 tsp. salt
1/4 c. butter
1 pkg. active dry yeast
1/4 c. warm water (110 degrees)
2 eggs
3 1/4 c. all-purpose flour
Crumbs
1 1/4 c. all-purpose flour
1/2 c. powdered sugar
1 tsp. baking powder
1/2 tsp. cinnamon
1/4 c. cold butter
1/2 tsp. vanilla
Recipe
Dough Preparation:
Heat the milk, sugar, salt and butter until the butter has melted; let cool to lukewarm. Dissolve the yeast in water. Mix in the milk mixture and eggs, then add 2 cups of the flour. Beat until the batter pulls away from the sides. Stir in 1 cup more flour to make a soft dough. Turn the dough onto a floured surface and knead until smooth (at least 10 minutes), adding flour as needed.
Place the dough in a greased bowl and cover. Let rise until almost doubled in size (about 1 hour). Punch down the dough and knead. Place in a greased, 14 inch round pan and let rest for 10 minutes. Pat the dough to fit the pan. Cover evenly with crumbs.
Crumbs
Stir together the flour, sugar, baking powder and cinnamon. Cut in the cold butter until the mixture forms coarse, moist crumbs. Mix in the vanilla.
Baking
Bake the cake in a preheated 375 degree oven for 25 minutes. Dust with powdered sugar before serving.
Note: A variation for this cake is an apple filling between the dough and the crumbs. To make the apple filling:
Combine 5 cups of peeled and chopped cooking apples, 2 tbsp. lemon juice and 1 tbsp. water. Boil over a medium heat, cover and simmer until the apples are just tender (about 10 minutes). Mix 3/4 cups of sugar, 2 tbsp. flour, 1/2 tsp. cinnamon and 1/4 tsp. nutmeg; then stir the mixture into the apples and cook until thickened. Let cool to room temperature.
