Wilted Lettuce Salad
List of Ingredients
4 slices bacon
1 quart leaf lettuce, torn in bite sized pieces
(Spinach can also be used)
1/4 - 1/2 cup green onion, finely chopped
salt and pepper
3 Tbs. red wine vinegar
1 Tbs. water
1 tsp. sugar
Recipe
Fry bacon until crisp. Drain and crumble. Reserve 2 Tbs. drippings. Warm a salad bowl. Toss lettuce, onion, and bacon in bowl. Season with salt and pepper. Mix vinegar, water, and sugar with reserved bacon drippings in frying pan. Bring to a boil, and while hot pour over lettuce and toss. Serve immediately.
