    Baked Eggplant Parmigiana

    List of Ingredients




    1 Eggplant
    2 Egg whites
    1/2 Teaspoon salt
    1/4 Teaspoon pepper
    Italian Bread crumbs
    1 Teaspoon olive oil
    1 Jar Spaghetti
    8oz Mozzarella cheese

    Recipe



    Slice eggplant about 1/4-inch thick.

    Cover with lightly salted water; soak about 1/2 hour; dry.

    Add salt and pepper to eggs; beat lightly.

    Dip eggplant slices in egg mixture; then in bread crumbs.

    Using olive oil, fry both sides of eggplant slices until slightly browned. Add additional oil to pan as needed.

    Remove slices; drain on paper towels.

    In baking dish, layer sauce, eggplant, cheese. Repeat.

    Bake at 350 degrees uncovered for 20-30 minutes. Yield 4 to 6 servings.
