Pan Roasted Potatoes
List of Ingredients
1 cup olive oil
Juice of ½mall lemon
2 teaspoons dried rosemary
Salt to taste (optional)
Freshly ground black pepper to taste
8 to 10 small red Bliss potatoes, quartered
Recipe
Preheat the oven to 400° F. In a large bowl, mix the oil with the lemon juice, rosemary, salt and pepper. Toss the potatoes in the mixture, place in a baking pan, and roast for 90 minutes. Turn the potatoes occasionally during the roasting time. (The potatoes can be partially cooked in the microwave to reduce the roasting time.) Serves 4 to 6.
