    Rotkraut (Red Cabbage)

    List of Ingredients




    2 lbs. red cabbage
    1 small onion
    1 apple
    2 Tbsp. butter or margarine
    1 bay leaf
    1 clove
    juniper berries
    salt
    pepper
    1/2 cup red wine
    1/2 cup water
    1/2 cup apple juice
    1/2 Tbsp. corn starch

    Recipe



    Wash and shred the red cabbage. Peel the apple and cut it into small pieces. Chop the onion. Heat the butter in a pan, add the apple and onion, and cook for 5 minutes. Add the cabbage and mix well. Pour in the wine, water, and apple juice and add the rest of the seasonings. Bring to a boil, cover, and cook to desired tenderness (usually at least an hour). Add more water and apple juice as needed. Salt and pepper to taste. Thicken with corn starch.
