Hoisin Chicken Topper

List of Ingredients
- 1/2 skinless boneless chicken breast, (4 oz), cooked finely chopped
- 1/2 - 8oz. package neufchatel cheese (1/3 less fat than cream cheese), softened
- 3 tablespoons hoisin sauce
- 1/4 cup finely chopped red pepper
- 1 tablespoon chopped cilantro
- 45 Ritz Reduced Fat crackers
Instructions
- Mix all ingredients except crackers; cover.
- Refrigerate at least one hour to blend flavors.
- Spoon about 1 teaspoon of the chicken mixture onto each cracker just before serving.
Final Comments
Makes 15 servings, 3 topped crackers each.
