    List of Ingredients




    2 C flour
    2 C sugar
    2 (3.5 oz) pkg instant coconut pudding mix
    1 t baking soda
    1 t salt
    1 t cinnamon
    1 1/4 C vegetable oil
    5 eggs
    2 C canned pumpkin

    Recipe



    Preheat oven to 325°. Lightly grease two 9x5 loaf pans.

    In a large bowl, combine flour, sugar, pudding mix, baking soda, salt and cinnamon. Stir the oil, eggs and pumpkin until just blended. Stir flour mixture into egg mixture. Pour batter into prepared pans.

    Bake in preheated oven for 1 hour or until toothpick inserted in center comes out clean. Remove from oven and let stand 15 mins, then remove from pan.
