    DONUTS
    4 1/2 cups all-purpose flour
    1/2 cup granulated sugar
    1 teaspoon instant yeast
    1 1/2 cup milk
    1 egg
    1 1/2 teaspoons salt
    8 Tablespoons butter (1 stick)

    GLAZE
    3 3/4 cups confectioners’ sugar
    1/2 cup hot water
    pinch of salt

    Whisk together the all purpose flour, sugar, and instant yeast. Add the milk and egg, mixing using a dough hook, for about two minutes on a medium low speed. Then cover and allow this to rest for 20 minutes.

    Add in one and a half teaspoons of salt and mix, still using the dough hook, for another five minutes.

    Gradually add in small pieces of the softened butter while the mixer continues to run. This may take 7 to 10 minutes for the butter to fully incorporate.

    Transfer the dough to a bowl and evenly coat the rounded dough with oil so it won’t stick to bowl. Cover the dough in the bowl and allow it to rest overnight in the refrigerator or up to 48 hours.

    Roll the dough into an approximate 10” x 13” rectangle and cut out approximately 12 donuts and donut holes.

    Place the donuts and donut holes on a sheet pan lined with parchment paper that has been sprayed with nonstick spray. Place in the oven that has been turned OFF with a pan of hot water and allow the dough to rise approximately 40 to 45 minutes more.

    Bring frying oil to 360°. Fry donuts in the hot oil. Fry the donuts for 30 seconds to 1 minute, flip them over, and fry 30 seconds to 1 minute on the other side. Watch carefully as they will overcook quickly.

    Remove the fried donuts to a cooling rack with paper towels underneath to absorb the extra oil.

    Prepare the glaze by combining the confectioners’ sugar, the hot water, and the pinch of salt. This will form a loose glaze that you will dredge the donuts in on both sides.

    If you want to make a chocolate glaze, make the same glaze as above but sift together the powdered sugar, salt, and 8 tablespoons of cocoa powder before stirring in the hot water.
