5.1 ounce package Vanilla Instant Pudding
3 Tablespoons sugar
1 teaspoon pumpkin spice
12 ounce can evaporated milk
1 egg, slightly beaten
1 cup canned pumpkin
9 inch baked pie shell, cooled
Cool Whip, optional
Recipe
Combine the pudding, sugar, pumpkin pie spice, milk, egg, and pumpkin in a saucepan.
Cook and stir over medium heat until the mixture comes to a full bubbling boil. Remove from the heat and cool for five minutes. Stir occasionally while the mixture is cooling. Pour the mixture into the baked pie shell and chill at least four hours. Serve with Cool Whip.
